驱车来到幽悠雅致的小巴黎,一道斑驳水泥墙装点的窟门拱顶,低调亮起 The Cave 二字招牌,这里就是在美食圈渐获好评的「The Cave by The Second Brother」。店家携手新山享誉西餐界的“二师兄”,由该主厨 Bryan 亲自设计菜单与团队培训,带来全新合作形式的品牌概念店。重新接手的餐厅装潢变动不大,仍保留地下室的粗旷工业风格,但融入几分复古艺术画廊的气息,墨绿色的靠背餐桌和高脚吧台区,颇具格调。若周五至周日前来享用晚餐,还能在 7pm-10pm 欣赏钢琴演奏,悠扬慢慢的背景音乐,为整体用餐氛围提升不少。

黑白色的菜单设计朴实而不素,标注着开胃菜、猪肉、鱼肉、披萨、意面、红白酒等标准西餐料理,都是由拥有超过25年西餐料理经验的二师兄主厨所构思。熟客自然不必多介绍,也深知他至今坚持用食物品质说话,以“Casual Fine Dining”的形式精心烹调每道佳肴,而且许多食材都是自家亲手调制的喔!其中最推荐的镇店招牌便是“猪拼盘”,简单粗暴的菜名没复杂巧思,但在西餐端上桌后却非常惊艳;另一道普遍的“熏鸭沙拉”,却被后劲尾随入喉的 Smokey 熏香味留下深刻印象。光是咀嚼就能分泌幸福多巴胺的好滋味,或许就是 The Cave 最强而有力的特色了。

★ 猪拼盘:可谓“镇店之宝”的西餐主食,含3种不同部位和烹煮形式的猪料理,即:Pork Belly、Ribs 和 Chop。最上端卷起的 Pork Belly 以自家秘方腌制并使用古式烤肉机香煎入味,油脂饱满又焦香软嫩,可见厨师的炙烤功夫甚是讲究;中间层是自家手工酱料调配的香甜酱汁 Ribs,底层是选用较少肥肉部分的半肥瘦猪肉煎制的 Pork Chop。
★ Cordon Blue:一道经典法式料理,主要用以鸡胸肉、火腿和奶酪裹卷制作。厨师独门秘方腌制后的鸡胸肉,吃起来特别软嫩,融入 Mozarella Cheese 再裹上自制面包糠油炸,外层炸衣薄而香脆,内层咸香软糯,配以菠菜和自制薯泥入嘴,而且份量真的非常阔气 (笑)!
